2021 El Rodeo Cabernet Sauvignon (Wine Club Only)

  • Blend: 95% Cabernet Sauvignon (Clone 191), 3% Merlot, 2% Petit Verdot

  • Vineyards: Cabernet Sauvignon - Tapteil Vineyard, Red Mountain AVA; Merlot – El Mochuelo Estate Vineyard, Lake Chelan AVA; Petit Verdot – Weinbau Vineyard, Wahluke Slope AVA

  • Harvested: 10/07/2021. Brix – 27.7, pH – 3.8.

  • Bottled: 08/16/23

  • Alcohol: 14.5%

Fermented in open fermenters.  Aged for 21 months in 95% new American Oak and 5% new French Oak.

 

Aromatics: Scents of brown sugar and caramel, tobacco, damson plum, and smoke

Palate: Bracing upfront acidity, followed by beautiful dark cherry and blackberry, smoke, tobacco, and molasses.  Finishes with long furry, tongue coating tannins. 

Color: Dark Garnet

Food Pairings: Venison with cherry sauce and/or wild boar sausage

When to drink: Can be drunken now,  but we would recommend holding for a year or two before opening.  This wine should age beautifully for 10+ years.

ABOUT US

We are firm believers that you cannot make great wine without great grapes. We work very hard to grow great grapes, handpicking our grapes each season. Each season brings new challenges, but when we harvest the beautiful fruit we’ve worked so hard for, it’s incredibly rewarding. We practice sustainable farming and are in our vineyard every day. We make sure each vine gets the optimal amounts of water, nutrients, and sun. We want to do as little wine making intervention as possible.
