Fermented in open fermenters and aged in 100% new French Oak for 22 months.
Aromatics: Dark berry fruit and cherry with baking spices and cloves.
Palate: Upfront are flavors of bright Bing cherries and brambleberry followed by backing spices and cloves on the mid-palate. Finishes with bright acidity and brown sugar.
Color: Dark garnet
Food Pairings: Filet mignon with blue cheese, beef stew, and/or beef Bolognese
When to Drink: Ready now, but this wine will improve over the next 2 to 3 years.Should age well for 5 to 8 years.
